- 50g of LaCuba dried figs - 300g of Spinach - 100g of cottege cheese or fresh cheese - 50g of grated parmesan cheese - 300g of flour - 1 egg - 250 ml of milk - 200 ml of single cream for cooking - 2 shallots - 2 garlic cloves - 3 spuns of olive oil - 1 spun of ginger. - Salt, black pepper and nutmeg.Preparation:
- Boil the spinach in water with salt for 5 mins, or in a covered plate in the microwave. - Put the figs in a bowl with hot water while cooking the rest of the recipe. - Mix and ground in a bowl the spinach, the cottage cheese and the egg. After trituration, add the flour, a bit of salt and pepper. Let settle for half an hour. - With flour o your hands and on the work surface, form small croquetes with the dough to make the gnocchi. - Boid the gnocchi utill they rise to the surface of the water. Once cooked take them out and let them settle, carefully so they do not stick together. - Fry the chopped garlic and shallots in the olive oil.
